1 box chocolate cake mix
3 (8 oz) packages cream cheese, softened
1 cup sugar
3 large eggs
1 tsp mint extract
Green food coloring
1 cup mini chocolate chips
1 cup heavy cream
8 oz semi-sweet chocolate, chopped
Directions:
1. Preheat Oven: Preheat oven to 350°F (175°C).
2. Make Cake Layers: Prepare cake mix according to package instructions. Bake in two round cake pans. Let cool.
3. Make Cheesecake Layer: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in mint extract and green food coloring. Fold in mini chocolate chips.
4. Bake Cheesecake: Pour filling into a springform pan and bake for 60 minutes. Let cool completely.
5. Assemble Cake: Layer one chocolate cake, the cheesecake, and then the second chocolate cake.
6. Make Ganache: Heat heavy cream until simmering. Pour over chopped chocolate and stir until smooth. Pour over assembled cake.
7. Serve: Serve chilled.
