For the Meatloaf Cupcakes:
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/4 cup ketchup
1/4 cup milk
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper, to taste
For the Whipped Potato Topping:
2 cups mashed potatoes (prepared and whipped until smooth & creamy)
Optional: 2 tbsp butter, splash of milk, and salt to taste for extra creaminess
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a 6-cup muffin tin.
2. Mix the meatloaf:
In a large bowl, combine ground beef, breadcrumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper. Mix just until combined—don’t overmix.
3. Fill muffin tin:
Divide the meat mixture evenly among the 6 muffin cups. Gently press down to shape them like cupcakes.
4. Bake:
Bake for 25–30 minutes, or until the meat is fully cooked (internal temp should reach 160°F / 71°C).
5. While baking, prepare potatoes if not already done. Whip with a bit of butter and milk until fluffy and smooth. You can use a piping bag (or zip-top bag with the corner snipped) for a decorative swirl.
6. Top the cupcakes:
Once meatloaf cupcakes are done, let them rest for 5 minutes. Then pipe or spoon the whipped mashed potatoes on top like frosting.
7. Optional garnish:
Sprinkle with chopped chives, shredded cheese, or a drizzle of ketchup or gravy.
