1/2 cup olive oil
▢Juice of 3 lemons
▢2 teaspons salt
▢1 teaspoon black pepper
▢2 Tablespoons dried oregano
▢1 teaspoon thyme
▢2 teaspoons garlic powder
▢5 medium yellow-fleshed potatoes cut into wedges and halved (about 1 1/2 – 2 inch pieces)
▢10 garlic cloves smashed
▢6 skin-on bone-in chicken drumsticks and legs

Preheat the oven: Preheat the oven to 425°F (220°C).
Prepare the marinade: Whisk together olive oil, lemon juice, salt, black pepper, dried oregano, thyme, and garlic powder in a large bowl.
Marinate the chicken: Add the chicken drumsticks and legs to the marinade and toss to coat.
Prepare the potatoes: Toss the potato wedges with some of the marinade and spread them out in a single layer on a baking sheet.
Roast the potatoes: Roast the potatoes in the oven for about 20-25 minutes, or until they’re tender and golden brown.
Add the chicken: Add the marinated chicken to the baking sheet with the potatoes and continue roasting for another 25-30 minutes, or until the chicken is cooked through.
Add smashed garlic: Add the smashed garlic cloves to the baking sheet with the chicken and potatoes for the last 10-15 minutes of cooking.
Serve: Serve the chicken and potatoes hot, garnished with fresh herbs if desired.
