6 bone-in, skinless chicken thighs
1/4 cup olive oil
3 cloves garlic, minced
1 tbsp lemon juice
2 tbsp soy sauce
1 tbsp Dijon mustard
1 tbsp honey
1 tsp dried thyme
Salt and pepper to taste

In a bowl, whisk together olive oil, garlic, lemon juice, soy sauce, Dijon mustard, honey, thyme, salt, and pepper until combined.
Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and ensure it is fully coated.
Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for the best flavor.
Preheat your grill or skillet over medium-high heat. Cook the chicken thighs for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
