Italian Sausage, Peppers & Onions 

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

1.5 lbs Italian sausage (mild or hot, or mix)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 large yellow onion, sliced

3 cloves garlic, minced

2 tbsp olive oil

1/2 cup crushed tomatoes (optional, for saucy version)

1/4 cup white wine or chicken broth

Salt & pepper, to taste

1 tsp dried oregano or Italian seasoning

Fresh basil or parsley for garnish

Hoagie rolls or cooked pasta (optional, for serving)

1. Sear the Sausage:
In a large skillet or Dutch oven, heat 1 tbsp olive oil over medium heat. Add the sausages and brown them on all sides (about 7–8 minutes). Remove and set aside — they don’t need to be fully cooked yet.

2. Sauté Veggies:
In the same skillet, add the remaining olive oil. Toss in the sliced peppers and onions. Cook until softened, about 8–10 minutes. Add garlic and cook for another minute.

3. Deglaze & Add Tomatoes (if using):
Pour in white wine or broth to deglaze the pan, scraping up the browned bits. Stir in crushed tomatoes if you like a saucier dish.

4. Combine & Simmer:
Return sausages to the pan. Sprinkle in oregano, salt, and pepper. Cover and simmer everything together for 15–20 minutes until sausages are fully cooked and the flavors meld.

5. Serve It Up!

On toasted hoagie rolls for the ultimate sandwich

Over buttery polenta or pasta

Or just as-is for a low-carb, high-flavor option
