Method to the Madness

1. Preheat & Prepare
Preheat your oven to 375°F (190°C). Line a baking dish with foil or parchment — not for neatness, but because the caramelized sauce is gloriously sticky.
2. Season the Salmon
Place the salmon in the dish. Pat dry. Sprinkle generously with salt and pepper. This is the only orderly part. Everything after this is delicious anarchy.
3. Make the Garlic Butter Chaos
In a small saucepan, melt the butter over medium heat. Add garlic and sauté for about 30 seconds until fragrant. Stir in honey, lime juice, zest, olive oil, and optional chili flakes. Let it bubble gently for 2–3 minutes until it thickens slightly.
4. Drench & Bake
Pour that sticky, garlicky, lime-honey butter all over the salmon. Use a spoon to coat it well. Bake uncovered for 15–18 minutes, or until the salmon flakes easily with a fork.
5. Broil for Glory (Optional)
Crank the broiler for the last 2–3 minutes to get a slightly charred top — controlled chaos at its finest.
Serving Suggestion
Plate the salmon with a drizzle of pan sauce, a sprinkle of fresh herbs, and lime wedges. Serve alongside fluffy rice, roasted veggies, or a fresh avocado salad to contrast the richness.
