Ingredients:

1–1.5 lbs pork tenderloin (trimmed of fat/silver skin)

Salt & pepper, to taste

2 tablespoons olive oil (or butter)

For the Honey Garlic Sauce:

4 cloves garlic, minced

1/4 cup honey

1/4 cup low-sodium soy sauce

2 tablespoons apple cider vinegar (or rice vinegar)

1 tablespoon Dijon mustard (optional, for depth)

1/2 teaspoon crushed red pepper flakes (optional, for heat)

1. Sear the Pork:

Preheat oven to 375°F (190°C).

Season the tenderloin generously with salt and pepper.

In a large oven-safe skillet, heat olive oil over medium-high heat.

Sear the pork on all sides (about 2–3 minutes per side) until browned.

2. Make the Sauce:

Lower the heat slightly, then add minced garlic to the pan and sauté for about 30 seconds.

Pour in the honey, soy sauce, vinegar, mustard, and red pepper flakes.

Stir and let it bubble for 1–2 minutes until slightly thickened.

3. Roast:

Spoon some of the sauce over the pork.

Transfer the skillet to the oven and roast for 15–20 minutes, or until internal temp reaches 145°F (63°C).

Baste the pork halfway through with more sauce.

4. Rest and Serve:

Remove pork from oven and let it rest 5–10 minutes before slicing.

Drizzle with pan sauce before serving.
