1 lb (450g) baby carrots
2 tbsp unsalted butter, melted
2 tbsp honey
2 cloves garlic, minced
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)

1. Preheat oven to 400°F (200°C).
2. In a bowl, whisk together melted butter, honey, and minced garlic.
3. Toss the baby carrots in the honey-garlic-butter mixture until well coated.
4. Spread the carrots in a single layer on a baking sheet lined with parchment paper or foil.
5. Season with salt and pepper.
6. Roast in the oven for 25–30 minutes, or until tender and lightly caramelized, stirring halfway through.
7. Remove from oven and sprinkle with fresh chopped parsley before serving.
