3 tablespoons olive oil

3 tablespoons honey

1 teaspoon ground cinnamon

4 cups sweet potatoes, peeled and cubed (about 2 large potatoes)

Salt to taste (optional)

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

2. Prepare the glaze: In a small bowl, whisk together olive oil, honey, and ground cinnamon until well combined.

3. Toss the sweet potatoes: In a large bowl, add the sweet potato cubes and pour the honey-cinnamon mixture over them. Toss until the potatoes are evenly coated.

4. Spread on baking sheet: Arrange the coated sweet potatoes in a single layer on the prepared baking sheet.

5. Roast for 25–30 minutes, flipping once halfway through, until the potatoes are tender and slightly caramelized at the edges.

6. Optional: Sprinkle with a little sea salt or chopped fresh parsley before serving.
