Instructions:
1. Activate the yeast:
In a large bowl, combine warm water, sugar, and yeast.
Stir gently and let sit for about 5–10 minutes, until the mixture becomes foamy. This means the yeast is active.
2. Mix the dough:
Add salt, olive oil (if using), and 2½ cups of flour to the yeast mixture.
Mix until a shaggy dough forms. If it’s too sticky, gradually add more flour, a tablespoon at a time.
3. Knead the dough:
Turn the dough out onto a lightly floured surface.
Knead for about 8–10 minutes until smooth and elastic.
4. First rise:
Place the dough in a lightly oiled bowl. Cover with a clean towel or plastic wrap.
Let it rise in a warm place for 1–1½ hours, or until doubled in size.

Punch down the dough and roll it out to your desired pizza size and thickness.
Add sauce, cheese, and toppings, then bake in a preheated oven at 475°F (245°C) for about 10–15 minutes, or until the crust is golden and toppings are cooked.
