1. Cinnamon Pancakes

1 ½ cups all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

¼ teaspoon salt

1 cup milk (or buttermilk)

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

Cinnamon Swirl:

¼ cup melted unsalted butter

¼ cup brown sugar

1 tablespoon cinnamon

1 tablespoon flour

Cream Cheese Glaze:

2 oz cream cheese

½ cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

1. Mix swirl ingredients until smooth and transfer to a piping bag.

2. In one bowl, combine dry ingredients. In another, whisk the wet. Mix gently and rest 5–10 minutes.

3. Pour batter onto a hot greased pan, pipe the cinnamon swirl, and cook until golden.

4. Drizzle with cream cheese glaze and serve warm.

2. Chocolate Pancakes

Ingredients:

1 ½ cups flour

¼ cup cocoa powder

¼ cup sugar

2 teaspoons baking powder

¼ teaspoon salt

1 cup milk

2 large eggs

¼ cup melted butter

1 teaspoon vanilla extract

½ cup chocolate chips (optional)

Toppings: Whipped cream, chocolate syrup, fruit, powdered sugar

Instructions:

1. Whisk dry ingredients in one bowl, wet in another. Combine and fold in chocolate chips.

2. Let batter rest for 5–10 minutes.

Ingredients:

1 ½ cups flour

2 tablespoons sugar

2 teaspoons baking powder

½ teaspoon baking soda

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

Toppings: Maple syrup, powdered sugar, extra blueberries

2. Fold in blueberries (coat frozen ones in a little flour first).
