For the cinnamon swirl:
1/3 cup light brown sugar
1 teaspoon ground cinnamon
For the loaf:
2/3 cup white sugar
1/2 cup butter, softened
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
1 apple, peeled and finely chopped (use a tart one like Granny Smith or Honeycrisp)
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
2. In a small bowl, mix together the brown sugar and cinnamon. Set aside.
3. In a large bowl, cream together the white sugar and butter until light and fluffy.
4. Beat in the eggs, one at a time, then stir in the vanilla extract.
5. In a separate bowl, whisk together the flour and baking powder.
6. Add the dry ingredients to the creamed mixture alternately with the milk, mixing just until incorporated.
7. Fold in the chopped apple.
8. Pour half the batter into the prepared pan. Sprinkle half the cinnamon-sugar mixture over the batter.
9. Add the remaining batter, then top with the rest of the cinnamon-sugar. Use a knife to gently swirl the cinnamon mixture through the loaf.
10. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
11. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
