Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper to taste
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small red onion, sliced
1 1/2 cups pineapple chunks (fresh or canned, drained)
1 cup BBQ sauce (your preferred kind)
2 tablespoons olive oil
Optional: chopped cilantro for garnish
Instructions:
Preheat your grill to medium-high heat or your oven to 400°F (200°C).
Season both sides of the chicken breasts with salt and pepper.
Cut four large sheets of aluminum foil and drizzle each with a little olive oil. Place one chicken breast in the center of each sheet.
Top each chicken breast with sliced red and green bell peppers, red onion, and pineapple chunks.
Spoon about 1/4 cup of BBQ sauce over each piece of chicken, then seal the foil tightly to form individual packets.
Place the foil packets on the grill or in the oven and cook for 20 to 25 minutes, until the chicken is fully cooked and the vegetables are tender.
Carefully open the foil packets, watching out for steam. Garnish with chopped cilantro if desired and serve hot.
