For the Pineapple Rings:
8 pineapple rings (fresh or canned, well-drained)
1 cup pineapple juice (for soaking)
1 cup all-purpose flour
1/4 cup cornstarch
2 tbsp granulated sugar
1 tsp baking powder
1/4 tsp salt
3/4 cup sparkling water or cold water (adjust for batter consistency)
Oil for frying
For the Coconut Sauce:
1 cup coconut milk (full fat for richness)
2 tbsp sweetened condensed milk or sugar (adjust to taste)
1/2 tsp vanilla extract
1 tsp cornstarch (optional, for thickening)
Pinch of salt
Instructions
1. Prep the Pineapple:
Soak pineapple rings in pineapple juice for 15–20 minutes to enhance flavor.
Pat dry with paper towels before frying.
2. Make the Batter:
In a bowl, whisk together flour, cornstarch, sugar, baking powder, and salt.
Add sparkling water and stir until smooth. Batter should be thick enough to coat but still pourable.
3. Fry the Pineapple Rings:
Heat oil in a deep pan (about 350°F / 175°C).
Dip each pineapple ring in the batter, letting excess drip off.
Fry 2–3 rings at a time until golden and crisp, about 2–3 minutes per side.
Drain on paper towels.
4. Prepare the Coconut Sauce:
In a small saucepan, combine coconut milk, sweetened condensed milk (or sugar), vanilla, and a pinch of salt.
Heat over medium, stirring constantly. For thicker sauce, dissolve cornstarch in 1 tbsp water and stir it in. Cook until slightly thickened.
Let it cool slightly before serving.
