Ingredients:
2/3 cup cornmeal
1/3 cup self-rising flour
1/3 cup low-fat buttermilk
1 large egg
1–2 tablespoons sugar (optional, for a touch of sweetness)
Pinch of salt (if using unsalted cornmeal)
Oil or bacon grease for frying
Instructions:
1. Mix the Batter:
In a bowl, whisk together cornmeal, self-rising flour, and a pinch of salt (if needed). Add the buttermilk and egg. Mix just until combined. If the batter is too thick, add a splash more buttermilk. If using sugar, stir it in now.
2. Heat the Oil:
Heat a skillet or griddle over medium heat and add a thin layer of oil or bacon grease.
3. Fry the Hoecakes:
Spoon about 2 tablespoons of batter per cake onto the hot skillet. Flatten slightly. Cook for 2–3 minutes per side or until golden brown and crispy on the edges.
4. Drain & Serve:
Remove to a paper towel-lined plate. Serve warm with butter, honey, or alongside beans, greens, or fried chicken
