Ingredients:

1 lb white fish fillets (such as cod or halibut)
1 can (14 oz) coconut milk
1 lime, juiced and zested
1 tsp cumin
1 tbsp olive oil
Salt and pepper to taste
1 ripe avocado, diced
1/2 red onion, finely chopped
1 tomato, diced
1/4 cup cilantro, chopped

Directions:
Preheat the grill or a skillet over medium heat. Season the fish fillets with cumin, salt, and pepper.
In a small bowl, mix lime juice, zest, and coconut milk. Brush the fish with this mixture, allowing it to marinate for 10–15 minutes.
Grill or cook the fish for 3–4 minutes on each side until cooked through and flaky.
While the fish cooks, prepare the avocado salsa by combining diced avocado, onion, tomato, cilantro, and a pinch of salt.
Serve the cooked fish topped with the fresh avocado salsa.
