4 English muffins, halved (makes 8 halves)
4 large eggs, scrambled
1/4 cup milk (for fluffier scrambled eggs)
1/2 cup cooked breakfast sausage or bacon, crumbled
1 cup shredded cheddar cheese (or mozzarella/your favorite cheese)
1/4 cup chopped bell peppers or onions (optional)
Salt and pepper, to taste
Butter or cooking spray (for the eggs)
Optional: chopped green onions or parsley for garnish
Instructions:
1. Preheat Oven to 375°F (190°C).
2. Toast the English muffins lightly in a toaster or oven until just golden.
3. Scramble the eggs:
In a bowl, beat the eggs with milk, salt, and pepper.
Heat a pan with butter or spray and cook eggs until just set. Don’t overcook.
4. Assemble the pizzas:
Place muffin halves on a baking sheet.
Layer each with scrambled eggs, sausage or bacon, and a sprinkle of chopped veggies (if using).
5. Top with cheese.
6. Bake for about 8–10 minutes, or until cheese is melted and bubbly.
7. Garnish with green onions or parsley if desired. Serve warm!
