Ingredients:

1/4 cup olive oil

2 tablespoons fresh lemon juice

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard (optional, for creaminess and flavor)

1 teaspoon honey or maple syrup (optional, for balance)

Salt and pepper to taste

Instructions:

1. In a small bowl or jar, whisk (or shake) together the lemon juice and apple cider vinegar.

2. Slowly whisk in the olive oil until well combined.

3. Add Dijon mustard and honey if using, then season with salt and pepper to taste.

4. Mix well and store in a sealed jar in the fridge for up to 1 week. Shake before using.
