Ingredients:
1 large bag Doritos (Nacho Cheese flavor), slightly crushed
1 lb lean ground beef
2 cups shredded cheddar cheese
1 packet taco seasoning (or 2 tbsp homemade)
1 head romaine or iceberg lettuce, chopped
1 cup diced tomatoes
1/2 cup diced red onion (optional)
1 can black beans or kidney beans, drained and rinsed (optional)
1 cup Catalina or ranch dressing (or to taste)
Instructions:
1. Cook the Beef:
In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease, then add taco seasoning and a splash of water. Simmer for 3–4 minutes until well coated. Let cool slightly.
2. Assemble the Salad:
In a large bowl, combine chopped lettuce, tomatoes, onions, and beans (if using). Add the cooled taco beef and cheese.
3. Add Doritos & Dressing:
Just before serving, toss in crushed Doritos and drizzle with dressing. Toss everything together until evenly mixed.
4. Serve Immediately:
Enjoy fresh and crunchy! Optional: top with sour cream, guacamole, or jalapeños.
