Ingredients:

2 medium beets, cooked and thinly sliced

1 large cucumber, thinly sliced

2 tablespoons red onion, thinly sliced (optional)

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 tablespoon fresh mint, chopped (optional)

Herb Dressing:

2 tablespoons olive oil

1 tablespoon lemon juice (or white wine vinegar)

1 teaspoon honey or maple syrup

1 small garlic clove, minced

Salt and black pepper to taste

1. Prepare the veggies: Slice the cooked beets and cucumber thinly (you can use a mandoline for even slices).

2. Whisk the dressing: In a small bowl, whisk together olive oil, lemon juice, honey, garlic, salt, and pepper.

3. Assemble the salad: In a large bowl or plate, arrange the beet and cucumber slices. Top with red onion if using.

4. Add herbs: Sprinkle chopped parsley, dill, and mint over the salad.

5. Drizzle dressing over the top just before serving.
