Crispy Fried Calamari
Ingredients:
1 lb squid (cleaned, tubes & tentacles), sliced into rings
1 cup all-purpose flour
½ cup cornstarch
1 tsp salt
½ tsp black pepper
½ tsp paprika (optional)
Oil for frying (vegetable, canola, or peanut)
Sweet & spicy orange dipping sauce
Instructions:
1. Rinse and pat squid rings completely dry to help the coating adhere and crisp.
2. In a bowl, mix flour, cornstarch, salt, pepper, and paprika.
3. Heat 2–3 inches of oil in a deep pan to 350°F (175°C).
4. Toss squid in the flour mixture, coating evenly. Shake off any excess.
5. Fry in small batches for 1½ to 2 minutes, just until golden.
6. Remove with a slotted spoon, drain on paper towels, and sprinkle with extra salt.
7. Serve hot with lemon wedges and dipping sauce.
Crispy Panko Shrimp
Ingredients:
For the Shrimp:
1 lb large shrimp, peeled and deveined (tails on)
1 tsp salt
½ tsp black pepper
1 tbsp all-purpose flour
For the Coating:
½ cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
For Frying:
Vegetable oil (canola or peanut)
Dipping Sauce:
2 tbsp soy sauce
2 tbsp mirin or rice vinegar
1 tsp grated ginger
Instructions:
1. Make shallow slits along the underside of each shrimp and press to straighten. Lightly season with salt and pepper.
2. Dust with 1 tbsp flour to help the coating stick.
3. Set up three bowls: flour, beaten eggs, and panko breadcrumbs.
4. Dredge shrimp in flour, dip in egg, then coat thoroughly with panko.
5. Heat oil to 350°F. Fry shrimp in batches for 2–3 minutes, flipping once.
6. Drain on paper towels.
7. To make the dipping sauce, combine soy sauce, mirin, and ginger in a small saucepan. Simmer for 1–2 minutes and let cool.
Fried Seafood Seaweed Rolls
Ingredients:
For the Filling:
½ cup cooked shrimp or imitation crab, finely chopped
1 green onion, finely chopped
1 garlic clove, minced
1 tsp soy sauce
½ tsp sesame oil
Pinch of pepper
1 tbsp mayo or cream cheese
For the Wrappers & Batter:
Roasted seaweed (nori), halved
1 egg, beaten (for sealing)
½ cup flour + ½ cup cornstarch
Water (to make a thin batter)
Oil for frying
Instructions:
1. In a bowl, mix seafood with garlic, soy sauce, sesame oil, green onion, and mayo or cream cheese.
2. Place a spoonful of filling on each seaweed half. Roll tightly like a spring roll. Seal with beaten egg.
3. Mix flour and cornstarch with water to make a light batter.
4. Dip rolls in the batter or dredge in dry flour.
5. Fry at 350°F for 1–2 minutes until crispy and golden.
6. Drain on paper towels and sprinkle lightly with salt.
