Ingredients:

4 bone-in pork chops

Salt and pepper, to taste

1 tablespoon olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup chicken broth

1 (10.5 oz) can cream of mushroom soup (or cream of chicken)

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme (optional)

1/2 teaspoon paprika

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons water (optional, for cornstarch slurry)

 

Instructions:

1. Season pork chops on both sides with salt and pepper.

2. Sear in a skillet over medium heat with olive oil (2–3 minutes per side) to get some color.

3. Add sliced onions and garlic to the crockpot.

4. Place the seared pork chops on top.

5. In a bowl, whisk together chicken broth, cream of mushroom soup, Worcestershire sauce, thyme, and paprika.

6. Pour the mixture over the pork chops in the crockpot.

7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until pork is tender.

8. (Optional) If you want a thicker sauce, mix cornstarch and water to make a slurry. Stir it into the sauce and cook on high for another 15 minutes.

9. Serve over mashed potatoes, rice, or egg noodles with the smothered gravy.
