3 lb beef roast (such as chuck roast)
1 envelope dry Italian salad dressing mix
1 cup beef broth (or water)
1 onion, sliced (optional for extra flavor)
3–4 carrots, chopped (optional)
3–4 potatoes, quartered (optional)

1. Place the beef roast in the bottom of your crockpot.
2. Sprinkle the dry Italian salad dressing mix evenly over the roast.
3. Pour beef broth (or water) around the roast.
4. If using, add onions, carrots, and potatoes around the roast.
5. Cover and cook on Low for 8–10 hours, or High for 4–5 hours, until the roast is tender and easily pulls apart.
6. Remove the roast, slice or shred, and serve with the vegetables and juices from the crockpot.
