1 cup beef broth
1–2 bell peppers (any color), sliced
1 onion, sliced
2 cloves garlic, minced
1 tsp ground black pepper
1 tbsp cornstarch (optional, for thickening)
1 tbsp water (optional, for thickening)
1 tbsp brown sugar (optional, for a touch of sweetness)
Cooked rice, for serving
Instructions:
1. Prep the steak:
Slice the flank steak thinly against the grain.
2. Layer in Crock Pot:
Place sliced steak, bell peppers, and onion in the Crock Pot.
3. Add liquids and seasoning:
In a small bowl, mix the soy sauce, beef broth, garlic, black pepper, and brown sugar (if using). Pour over the meat and vegetables.
4. Cook:
Low: 6–7 hours
High: 3–4 hours
5. Optional thickening:
If you’d like the sauce thicker, mix 1 tbsp cornstarch with 1 tbsp cold water, then stir it into the Crock Pot about 30 minutes before serving. Turn to high and cook uncovered until thickened.
6. Serve:
Spoon over cooked rice or noodles.
