Ingredients:

8 oz (225g) pasta (penne, fettuccine, or your choice)

2 salmon fillets (about 6 oz each)

Salt & black pepper, to taste

1 tbsp olive oil

2 cloves garlic, minced

2 cups fresh spinach

1 cup heavy cream (or half & half for lighter)

½ cup grated Parmesan cheese

1 tsp lemon zest (optional)

Juice of ½ lemon

Red pepper flakes (optional)

1. Cook the pasta in salted water according to package directions. Drain and set aside.

2. Season the salmon with salt and pepper.

3. Sear the salmon:

Heat olive oil in a skillet over medium heat.

Cook salmon skin-side down for 4–5 mins, then flip and cook another 3–4 mins until fully cooked.

Remove from skillet, let rest, then flake into chunks.

4. Make the sauce:

In the same skillet, add a touch more oil if needed.

Sauté garlic until fragrant (30 seconds).

Add spinach and cook until wilted (1–2 mins).

Pour in the cream and stir in Parmesan. Let simmer for 2–3 mins until thickened.

Add lemon juice, zest (if using), and season with salt, pepper, and red pepper flakes.

5. Combine:

Toss in cooked pasta and salmon. Gently mix to coat.

6. Serve warm, garnished with extra cheese or herbs if desired.
