2 tablespoons honey
2¼ teaspoons active dry yeast (1 packet)
2½–3 cups all-purpose flour
1½ teaspoons salt
2 tablespoons unsalted butter, softened
For the Garlic Butter Topping:
3 tablespoons unsalted butter, melted
½ teaspoon garlic powder
½ teaspoon salt (or to taste)
Optional: pinch of dried parsley for garnish
Instructions:
1. Activate the Yeast:
In a large bowl, combine warm water and honey. Sprinkle the yeast over the top and let sit for 5–10 minutes, until foamy.
2. Make the Dough:
Stir in the softened butter, salt, and 2½ cups flour. Mix until a soft dough forms. Add more flour, 1 tablespoon at a time, if too sticky.
3. Knead:
Turn out onto a floured surface and knead for 8–10 minutes until smooth and elastic. (Or knead with a mixer dough hook for 5–6 minutes.)
4. First Rise:
Place dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour, or until doubled.
5. Shape the Breadsticks:
Punch down dough and divide into 10–12 equal pieces. Roll each into a rope about 7 inches long. Place on a parchment-lined baking sheet.
6. Second Rise:
Cover loosely with a clean towel and let rise again for 20–30 minutes until puffy.
7. Bake:
Preheat oven to 400°F (200°C). Bake breadsticks for 12–14 minutes, or until lightly golden.
8. Add Garlic Butter:
While hot, brush generously with melted garlic butter and sprinkle with salt (and parsley if using).
