Ingredients:

¾ cup all-purpose flour

2 tablespoons cornstarch

¼ teaspoon baking soda

¼ teaspoon baking powder

½ teaspoon salt

½ teaspoon sugar (optional, but helps browning)

½ cup cold water (plus more as needed for consistency)

Dash of paprika or onion powder (optional for flavor)

 

Instructions:

1. In a bowl, whisk together flour, cornstarch, baking soda, baking powder, salt, and sugar.

2. Slowly add cold water and whisk until smooth. The batter should be slightly thick but pourable. Adjust water as needed.

3. Dip your fish, shrimp, or veggies into the batter, coating well.

4. Carefully fry in hot oil (around 350°F / 175°C) until golden and crispy—about 3–4 minutes per side.

5. Drain on paper towels. Serve hot with tartar sauce or lemon wedges!
