1 lb beef sirloin or flank steak, sliced thin against the grain
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium onion, sliced
2 tbsp soy sauce
1 tbsp oyster sauce (optional for richer flavor)
1 tbsp cornstarch
2 tbsp water (for cornstarch slurry)
2 cloves garlic, minced
1 tsp fresh ginger, minced
1 tbsp Shaoxing wine or dry sherry (optional)
1 tsp sugar
1/2 tsp black pepper
2 tbsp oil (vegetable or sesame)
Green onions for garnish (optional)
Cooked white rice (for serving)

1. Marinate the Beef:
In a bowl, mix sliced beef with 1 tbsp soy sauce, 1/2 tbsp cornstarch, 1 tsp Shaoxing wine (optional), and a pinch of black pepper.
Let it marinate for 15–30 minutes while prepping other ingredients.
2. Prepare Sauce:
In a small bowl, mix remaining 1 tbsp soy sauce, oyster sauce, sugar, remaining 1/2 tbsp cornstarch, and 2 tbsp water. Set aside.
3. Stir-Fry:
Heat 1 tbsp oil in a large skillet or wok over high heat.
Add marinated beef in a single layer. Sear quickly for 1–2 minutes per side until just browned. Remove and set aside.
Add another 1 tbsp oil. Stir-fry garlic, ginger, and onion for about 1 minute.
Add sliced bell peppers. Cook for 2–3 minutes until slightly tender but crisp.
4. Combine and Finish:
Return beef to the pan. Pour in the sauce.
Stir-fry everything together for another 1–2 minutes until the sauce thickens and coats the meat and veggies.
5. Serve:
Garnish with green onions if desired.
Serve hot with steamed white rice.
