1 pound beef top sirloin steak
¼ cup soy sauce
2 tablespoons white sugar
2 tablespoons cornstarch
½ teaspoon ground ginger
3 tablespoons vegetable oil, divided
1 red onion, cut into 1-inch squares
1 green bell pepper, cut into 1-inch squares
2 tomatoes, cut into wedges

Slice the steak into 1/2-inch thick slices across the grain.
In a bowl, whisk together soy sauce, sugar, cornstarch, and ginger until smooth and the sugar has dissolved. Add the steak slices to the marinade and stir until well-coated.
Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Cook the steak strips in batches, making sure not to overcrowd the pan. Stir and cook until well-browned, about 3 minutes per batch. Remove the steak from the wok and set aside. Repeat with the remaining steak, adding oil as needed.
Return the cooked steak to the wok and add the onion. Stir and cook for about 2 minutes until the onion starts to soften. Add the green bell pepper and continue to cook and stir for another 2 minutes until the pepper becomes bright green and slightly tender. Add the tomato wedges and stir everything together to combine and heat through. Serve hot.
