Ingredients:

1/2 cup vegetable oil

2 tbsp red chili flakes

1 tbsp fried garlic

1 tbsp fried shallots

1 tsp soy sauce

1/2 tsp sugar

1/2 tsp salt

 

Instructions:

1. Heat the oil: In a small saucepan, heat the vegetable oil over medium heat until it’s shimmering but not smoking (about 180°C or 350°F). Remove from heat.

2. Add chili flakes: In a heatproof bowl, add the red chili flakes.

3. Pour hot oil: Carefully pour the hot oil over the chili flakes. It will sizzle and release aroma — that’s normal!

4. Stir in the rest: Add the fried garlic, fried shallots, soy sauce, sugar, and salt. Stir well to combine.

5. Cool & store: Let it cool completely, then transfer to a clean jar. Store in the fridge for up to a month.
