Pineapple chicken
Ingredients
1.5 lbs chicken breast
1/2 cup pineapple juice
1/4 cup soy sauce
2 tbsp Olive oil
Instructions
1. Marinate – In a bowl, whisk together pineapple juice, soy sauce, and olive oil. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes (up to 4 hours).
2. Cook – Heat a skillet over medium-high heat. Remove chicken from marinade, letting excess drip off. Cook for 5–6 minutes per side until cooked through (165°F / 74°C internal temp).
3. Serve – Spoon some of the pan juices over the chicken. Great with rice or stir-fried veggies.
Fajita chicken
Ingredients
1.5 lbs chicken breast
1/3 cup olive oil
1/4 cup lime juice
2 tbsp fajita seasoning
2 tbsp soy sauce
Instructions
1. Marinate – Mix olive oil, lime juice, fajita seasoning, and soy sauce in a large bowl or zip-top bag. Add chicken breasts and coat thoroughly. Refrigerate for 30 minutes to 2 hours.
2. Cook – Heat a grill pan or skillet over medium-high heat. Cook chicken for 5–6 minutes per side until cooked through.
3. Slice & Serve – Slice into strips and serve with warm tortillas, peppers, onions, and your favorite toppings.
Lemon Garlic
Ingredients
1.5 lbs chicken breast
1/4 cup Olive oil
1/4 cup Dijon mustard
3 tbsp honey
2 tbsp apple cider vinegar
Instructions
1. Marinate – In a bowl, whisk together olive oil, Dijon mustard, honey, and apple cider vinegar. Add chicken breasts and coat evenly. Cover and marinate for at least 30 minutes.
2. Cook – Preheat oven to 375°F (190°C) or heat a skillet over medium-high heat. Cook chicken until golden on each side, then (if using skillet) lower heat and cover until cooked through.
3. Serve – Drizzle with remaining sauce and pair with roasted vegetables or salad.
Smoky mustard

1/2 cup barbecue sauce
2 tbsp olive oil
1 tbsp soy sauce
1 tsp smoked Paprika
Instructions
1. Mix Sauce – Combine barbecue sauce, olive oil, soy sauce, and smoked paprika in a bowl. Add chicken and coat thoroughly.
2. Cook – Grill over medium heat or pan-sear for 5–6 minutes per side until fully cooked.
3. Serve – Brush with extra sauce before serving for more smoky flavor.
