Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup pickle juice (for marinating)
1/4 cup milk
1 egg
1 cup all-purpose flour
2 tablespoons powdered sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
Optional: 1/2 teaspoon paprika or garlic powder for extra flavor
Oil for frying (peanut oil is closest to original, but any neutral oil works)
Instructions:
1. Marinate
Place chicken pieces in a bowl or ziplock bag with the pickle juice.
Marinate in the fridge for 30 minutes to 1 hour.
2. Prepare Egg Wash
In a bowl, whisk together milk and egg.
3. Mix the Coating
In another bowl, combine flour, powdered sugar, salt, pepper, and any optional seasonings.
4. Bread the Nuggets
Remove chicken from the pickle juice.
Dip each piece into the egg wash, then dredge in the flour mixture until well coated.
5. Fry
Heat oil in a deep pan to 350°F (175°C).
Fry nuggets in batches for 3–5 minutes, until golden brown and cooked through.
Drain on paper towels.
6. Serve
Serve hot with honey mustard, BBQ, or Chick-fil-A sauce!
