1 lb ground beef or ground turkey
½ cup breadcrumbs
1 egg
2 cloves garlic, minced
¼ cup onion, finely chopped
2 tbsp ketchup (or BBQ sauce)
1 tbsp Worcestershire sauce (optional, for depth)
½ tsp salt
¼ tsp black pepper
½ tsp Italian seasoning or dried parsley
Cheese cubes (mozzarella, cheddar, or your favorite — cut into ½-inch cubes)
Optional topping: extra ketchup or BBQ sauce for brushing
Instructions:
1. Preheat Oven:
Set to 375°F (190°C) and lightly grease a muffin tin or line a baking sheet with parchment paper.
2. Make Meat Mixture:
In a large bowl, mix ground beef/turkey, breadcrumbs, egg, garlic, onion, ketchup, Worcestershire (if using), salt, pepper, and seasoning until just combined. Don’t overmix.
3. Form Bites:
Scoop about 2 tablespoons of the meat mixture and flatten it slightly in your hand.
Place a cube of cheese in the center, then shape the meat around it into a ball to seal the cheese inside.
4. Bake:
Place meatloaf bites into the muffin tin or on the baking sheet.
Optional: Brush tops with extra ketchup or BBQ sauce for a glaze.
Bake for 18–22 minutes, or until cooked through and browned. Internal temp should reach 160°F (71°C).
5. Cool & Serve:
Let rest for 5 minutes before serving (cheese will be hot!). Garnish with parsley if desired.
