1 large head of cauliflower, cut into florets
3 tbsp olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 tsp dried Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with olive oil, minced garlic, Italian seasoning, salt, and black pepper. Ensure all the cauliflower is well-coated.
Roast the Cauliflower: Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, stirring halfway through to ensure even browning.
Add Cheese: Remove the cauliflower from the oven. Sprinkle grated Parmesan first, followed by shredded mozzarella. Return to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
Garnish and Serve: Take the cauliflower out of the oven and garnish with fresh parsley. Serve immediately while the cheese is warm and gooey.
