Ingredients:
4 boneless, skinless chicken breasts
1 cup mushrooms, finely chopped
1/2 cup cream cheese, softened
1/2 cup shredded mozzarella cheese
3 tablespoons butter
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
1/4 cup grated Parmesan cheese
Fresh parsley, for garnish
Directions:
Preheat Oven:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Chicken:
Cut a pocket into each chicken breast without cutting all the way through.
In a bowl, combine mushrooms, cream cheese, mozzarella cheese, garlic, thyme, parsley, salt, and pepper.
Stuff each chicken breast with the mushroom mixture.
Cook the Chicken:
In a skillet, melt butter over medium heat.
Sear stuffed chicken breasts for 3–4 minutes on each side until golden brown.
Bake the Chicken:
Transfer seared chicken breasts to the prepared baking sheet.
Sprinkle grated Parmesan cheese over each chicken breast.
Bake for 20–25 minutes until chicken is cooked through and cheese is melted.
Serve:
Garnish with fresh parsley before serving.
