1. Preheat oven to 200°C (400°F).

2. Season the chicken: Pat the chicken breasts dry and season both sides with salt, pepper, and paprika.

3. Sear the chicken: In an oven-safe skillet, heat olive oil or 1 tbsp butter over medium-high heat. Add the chicken and cook for 3–4 minutes per side, until golden brown. Remove from pan and set aside.

4. Make the garlic butter: In the same skillet, lower the heat and add the remaining butter. Once melted, stir in the minced garlic and cook for 30 seconds until fragrant (don’t let it burn).

5. Add cheese: Turn off the heat. Place chicken back in the pan and spoon garlic butter over the top. Sprinkle mozzarella and Parmesan cheese evenly over the chicken.

6. Bake: Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken is fully cooked (internal temp 75°C/165°F) and cheese is bubbly and golden.

7. Garnish and serve: Sprinkle with chopped parsley. Serve hot with mashed potatoes, pasta, or vegetables.
