2 boneless, skinless chicken breasts, cut into bite-sized chunks
12 oz rotini pasta
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
4 cloves garlic, minced
1 tablespoon butter
1 cup heavy cream
1/2 cup chicken broth
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
Fresh parsley, chopped for garnish

1️⃣ Bring a large pot of salted water to a boil. Cook rotini according to package instructions until al dente. Drain and set aside.
2️⃣ Heat olive oil in a large skillet over medium-high heat. Toss chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
3️⃣ Add seasoned chicken to skillet and cook for 6-7 minutes until browned and fully cooked through. Remove chicken and set aside.
4️⃣ In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
5️⃣ Pour in chicken broth and heavy cream. Bring to a gentle simmer.
6️⃣ Stir in mozzarella, Parmesan, and cheddar cheeses. Mix until smooth and fully melted.
7️⃣ Add cooked rotini and chicken back to skillet. Toss to coat everything evenly in the cheesy Cajun garlic sauce.
8️⃣ Let simmer for 2-3 minutes to meld flavors. Garnish with fresh chopped parsley and serve hot.
