Ingredients:

200 ml whole milk

150 g cheddar cheese, grated

1 tablespoon butter

1 tablespoon all-purpose flour

1/2 teaspoon mustard (optional, adds a tangy depth)

1. Make a roux:
In a saucepan over medium heat, melt the butter. Add the flour and whisk constantly for about 1 minute to form a smooth paste (this cooks out the raw flour taste).

2. Add milk:
Slowly pour in the milk while whisking to avoid lumps. Continue whisking until the mixture thickens slightly (about 2–3 minutes).

3. Add cheese:
Lower the heat and stir in the grated cheddar cheese until melted and smooth.

4. Optional flavor:
Add mustard if using, and stir until fully combined.

5. Serve:
Pour over hot fries or serve as a dipping sauce!
