Ingredients:
4 large cod or haddock fillets (about 6 oz each)
Salt & pepper to taste
Oil for frying (vegetable or canola)
For the Batter:
1 cup all-purpose flour
1/4 cup cornmeal (for extra crispiness)
1 tbsp baking powder
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp white pepper (or black)
1 cup cold sparkling water or club soda (adjust for consistency)
1 egg, beaten
Instructions:
1. Prep the Fish:
Pat the fish fillets dry with paper towels.
Season lightly with salt and pepper.
Let them rest while you prepare the batter.
2. Make the Batter:
In a large bowl, mix together flour, cornmeal, baking powder, salt, and spices.
Add the egg and cold club soda gradually, whisking until smooth. The batter should be thick enough to coat the back of a spoon.
3. Heat the Oil:
Heat about 2–3 inches of oil in a deep fryer or heavy pot to 350°F (175°C).
4. Dip & Fry:
Dip each fillet in the batter, letting excess drip off.
Carefully lower into the hot oil and fry 4–6 minutes, turning once, until golden brown and crispy.
Fry in batches to avoid crowding.
5. Drain & Serve:
Remove and place on a wire rack or paper towel-lined plate.
Serve with tartar sauce, fries, coleslaw, or hush puppies!
