Ingredients:
1 can (20 oz) pineapple rings, drained
1 cup granulated sugar
½ cup water
½ cup Skittles (sorted by color or mixed – your choice)
Instructions:
1. Make the syrup:
In a saucepan, combine the sugar and water over medium heat. Stir until the sugar dissolves completely and the mixture starts to simmer.
2. Add pineapple rings:
Gently add the drained pineapple rings to the syrup. Lower the heat and let them simmer for 20–25 minutes, flipping occasionally, until they absorb some of the syrup and become slightly translucent.
3. Crush the Skittles (optional but recommended for coating):
While the pineapple simmers, crush Skittles by color using a food processor or in a ziplock bag with a rolling pin. This will create fruity, colorful powders.
4. Dry and coat:
Remove the pineapple rings and place them on a wire rack to cool for 5–10 minutes.
While still slightly tacky, sprinkle or press the crushed Skittles onto the pineapple for a fun, colorful candy crust.
5. Let set:
Allow to dry completely at room temperature (about 1–2 hours) or chill in the fridge to firm up.
