Ingredients:

1/2 cup mayonnaise

1/3 cup olive oil

3 tbsp lemon juice (freshly squeezed)

2 tbsp Parmesan cheese, finely grated

1 garlic clove, minced

2 anchovy fillets, minced (optional but traditional)

1 tsp Dijon mustard

Salt and pepper, to taste

 

Instructions:

1. In a bowl or jar, combine the mayonnaise, lemon juice, Dijon mustard, and garlic.

2. Add the minced anchovies (if using), then stir in the grated Parmesan.

3. Slowly whisk in the olive oil until the dressing is smooth and emulsified.

4. Season with salt and pepper to taste.

5. Chill for 10–15 minutes before serving for best flavor.
