For #Salmon:
In a pan add 1 Tablespoon Canola oil & 1 Tablespoon Unsalted Butter over medium heat. Pat salmon dry. Season both sides of salmon with 1 Tablespoon of your favorite seasonings. When pan is hot, place salmon in pan and cook for 4-5 minutes skin side up. Flip salmon over when nicely browned and cook an additional 3-4 minutes. While salmon is cooking add in 1 Tablespoon minced garlic and drizzle 2 Tablespoons of honey over top. Place salmon in an oven safe baking sheet lined with parchment paper. Sit on middle rack and low broil for about 5-8 minutes or until done. Salmon is finished when no longer pink or opaque inside and internal temp is 145°F. Drizzle a bit of pan juices or more honey over last. By Chef Taling
For #mango #salsa:
In a bowl stir together ⅓ Cup chopped tomatoes (keep juices) ⅓ Cup ripe diced mangoes, 2 Tablespoons chopped red onion, a bit of cilantro to taste, 1 Tablespoon extra virgin olive oil. I add 2 teaspoons of sugar as well. Squeeze in 3-4 Tablespoons of fresh lemon or lime juice for juicier salsa. Keep chilled. Add over your salmon or have with chips and serve!
