Ingredients:
4 breakfast sausage links or 1/2 lb sausage meat (crumbled)
1 red bell pepper, diced
1 green bell pepper, diced
1/2 small onion, diced (optional)
4 large eggs
1 tbsp olive oil or butter
Salt & pepper, to taste
Optional: shredded cheese, chili flakes, fresh herbs
Instructions:
1. Cook the sausage:
In a large skillet over medium heat, cook sausage until browned and fully cooked (about 6–8 minutes). If using links, slice after cooking.
Remove and set aside. Drain excess fat if needed.
2. Sauté the peppers (and onion if using):
In the same skillet, add a little oil or butter if needed.
Add diced peppers (and onion) and cook for 4–5 minutes, until softened.
3. Add the eggs:
Push the veggies to one side of the skillet or make space in the center.
Crack the eggs into the skillet and cook to your preference:
Scrambled: Stir together with the veggies and sausage until just set.
Fried: Leave eggs whole and cook until whites are set and yolks are as you like.
Egg cups: Crack eggs over sausage and peppers, cover the pan, and let steam for 2–3 mins for a baked-style egg.
4. Combine and season:
Add the sausage back to the pan.
Season with salt, pepper, and any extras (cheese, herbs, hot sauce).
