Ingredients:

1 lb (450g) shrimp, peeled and deveined
2 tbsp olive oil
3 cloves garlic, minced
1 inch (2.5 cm) piece of ginger, grated
1 bunch bok choy, chopped
1 red bell pepper, sliced
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil
1 tbsp honey
2 green onions, sliced
1 tbsp sesame seeds (optional)
Salt and pepper to taste

Prepare the ingredients: peel and devein the shrimp, chop the bok choy and red bell pepper, mince the garlic, grate the ginger, and slice the green onions.
Heat olive oil in a large skillet over medium-high heat. Add garlic and ginger, sauté for 1–2 minutes until fragrant.
Add shrimp and cook for 2–3 minutes on each side until pink and cooked through. Remove shrimp and set aside.
In the same skillet, add more olive oil if needed and sauté bok choy and red bell pepper for about 5 minutes until tender yet crisp.
Return shrimp to the skillet with vegetables. Pour in soy sauce, rice vinegar, sesame oil, and honey. Stir well and cook for another 2–3 minutes.
Season with salt and pepper. Sprinkle with green onions and sesame seeds. Serve hot.
