Ingredients:

8 oz cream cheese, softened

16 oz sour cream

1 oz packet ranch seasoning mix

15 oz can fire-roasted corn, drained

10 oz can Rotel (diced tomatoes with green chilies), drained

4 oz can diced green chiles, drained

8 oz shredded cheddar cheese

1. Mix base ingredients: In a large bowl, beat the softened cream cheese until smooth. Add the sour cream and ranch seasoning mix, and stir until well combined.

2. Add mix-ins: Fold in the fire-roasted corn, Rotel, diced green chiles, and shredded cheddar cheese.

3. Chill: Cover and refrigerate for at least 1 hour to let the flavors meld. (You can also serve it immediately if you’re in a rush, but chilling improves the flavor.)

4. Serve: Serve cold with tortilla chips, crackers, or as a spread in wraps or sandwiches.
