2 1/2 cups all-purpose flour

2 tsp cocoa powder

1 tsp baking soda (I think “paprika soda” was a typo — should be baking soda)

1/2 tsp salt

1 1/2 cups granulated sugar

1 cup vegetable oil

2 large eggs

1 cup buttermilk

2 tsp vanilla extract

1 tsp white vinegar

2–3 tsp blue food coloring (gel works best for rich color)

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.

3. In a large mixing bowl, beat sugar and oil until combined. Add eggs one at a time, mixing well after each.

4. Mix in buttermilk, vanilla, vinegar, and blue food coloring until smooth.

5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

6. Divide batter evenly between prepared pans.

7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

8. Cool completely before frosting.
