1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.

2. Melt chocolate & butter: In a microwave-safe bowl or double boiler, melt the chopped bittersweet chocolate and butter together until smooth. Stir well and let cool slightly.

3. Add sugar & eggs: Stir in the granulated sugar, then beat in the eggs one at a time until fully incorporated.

4. Mix dry ingredients: Add the flour, salt, and stir just until combined.

5. Color & flavor: Add the vanilla extract and blue food coloring. Mix until evenly tinted. Add more coloring if a deeper blue is desired.

6. Bake: Pour the batter into the prepared pan and spread evenly. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs.

7. Cool: Let brownies cool completely in the pan.

Optional Cream Cheese Frosting:

1. Beat softened cream cheese and butter together until smooth.

2. Add powdered sugar gradually and beat until fluffy.

3. Mix in vanilla extract.

4. Spread over cooled brownies, then slice and serve.
