Ingredients:

2 large sweet onions

2 ½ cups all-purpose flour

1 teaspoon cayenne pepper

2 tablespoons paprika

1 teaspoon dried oregano

1 teaspoon cumin

½ teaspoon black pepper

1 teaspoon kosher salt

2 eggs

1 cup whole milk

Vegetable oil for frying

1. Peel and slice the onion into 16 segments, leaving the root intact.

2. In a bowl, whisk together eggs and milk.

3. In another bowl, combine flour with spices.

4. Dip the onion into the egg mixture, then coat with the flour mixture.

5. Heat oil in a deep fryer or large pot to 375°F (190°C).

6. Fry the onion until golden brown, about 3-4 minutes.

7. Serve with a dipping sauce of mayonnaise, ketchup, horseradish, paprika, salt, and pepper.

Onion Rings

Ingredients:

1 large Vidalia or other sweet onion

1 ¼ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 quart oil for frying

Instructions:

1. Slice the onion into ¼-inch rings.

2. In a bowl, mix flour, baking powder, and salt.

3. Dip onion rings into the flour mixture, coating evenly.

4. Heat oil in a deep fryer or large pot to 365°F (185°C).

5. Fry the onion rings until golden brown, about 2-3 minutes.

6. Drain on paper towels and serve hot.

Onion Ring Chips

Ingredients:

2–3 medium white onions, sliced into ¼-inch thick rounds

8 ounces freshly shredded Parmesan cheese

½ tablespoon extra virgin olive oil

Salt, garlic powder, and paprika, to taste

Instructions:

1. Preheat oven to 400°F (200°C).

2. Place onion slices on a baking sheet lined with parchment paper.

3. Sprinkle Parmesan cheese over the onions.

4. Drizzle with olive oil and season with salt, garlic powder, and paprika.

5. Bake for 18-20 minutes, or until the cheese is melted and the edges are crispy.

6. Let cool slightly before serving.
