Ingredients
1 beef leg (approximately 2-3 kg)
Salt and pepper to taste
2 tablespoons of the olive oil
1 cup of pineapple juice
1/2 cup soy sauce
1/2 cup of brown sugar
4 cloves of garlic, minced
1 onion, chopped
1 fresh pineapple, peeled and sliced
1 tablespoon of fresh ginger, grated
2 tablespoons of apple vinegar
1 teaspoon of cumin powder
1 teaspoon of sweet pepper
Fresh chopped parsley for garnish
Preparation
Prepare the leg of beef
Preheat the oven to 180°C (350°F).
Season leg of beef with salt and pepper to taste.
In a large skillet, heat the olive oil over medium-high heat. Gold the ox leg all around until it’s sealed well. Remove from fire and place in baking tray.
Prepare the pineapple marinade:
In a large bowl, mix pineapple juice, soy sauce, brown sugar, minced garlic, chopped onion, grated ginger, apple vinegar, cumin and sweet pepper.
Marinate and bake:
Pour the marinade over the beef leg in the baking tray, making sure you cover all the meat well.
Place the pineapple slices around and on top of the beef leg.
Cover the tray with tin foil and bake for 2 hours, sprinkling occasionally with juices from the tray.
After 2 hours, remove aluminum foil and continue baking for an additional 30 minutes, or until the beef leg is tender and golden.
Serve:
Remove beef leg from oven and let sit for 10 minutes before cutting.
Serve the beef leg slices with the pineapple slices and juices from the tray.
Garnish with fresh chopped parsley.
