Ingredients
For the Dough:
1 cup warm milk (about 110°F)
2¼ teaspoons active dry yeast (1 packet)
½ cup melted unsalted butter
2 eggs, room temperature
1 cup mashed ripe bananas (about 2 medium)
¼ cup granulated sugar
½ teaspoon salt
4 – 4½ cups all-purpose flour
For the Filling:
¾ cup brown sugar, packed
1 tablespoon ground cinnamon
¼ cup unsalted butter, softened
½ cup chopped pecans or walnuts (optional)
½ cup mashed bananas (optional, for extra banana flavor)
For the Cream Cheese Glaze:
4 oz cream cheese, softened
2 tablespoons unsalted butter, softened
1 cup powdered sugar
1–2 tablespoons milk (adjust for desired consistency)
½ teaspoon vanilla extract
Instructions
1. Make the Dough
1. In a large bowl or stand mixer, combine the warm milk and yeast. Let sit for 5–10 minutes until foamy.
2. Add the melted butter, eggs, mashed bananas, sugar, and salt. Mix until combined.
3. Gradually add flour, 1 cup at a time, mixing until a soft dough forms. Knead for about 5–7 minutes until the dough is smooth and elastic.
4. Place dough in a greased bowl, cover, and let rise in a warm place for 1–1.5 hours, or until doubled in size.
2. Prepare the Filling
1. In a small bowl, mix together brown sugar and cinnamon.
2. Once dough has risen, punch it down and roll it out on a floured surface into a rectangle (about 16×12 inches).
3. Spread softened butter over the dough. Sprinkle cinnamon sugar mixture evenly. Add mashed bananas and nuts, if using.
3. Roll and Cut
1. Tightly roll the dough up from the long edge, creating a log.
2. Slice into 12 rolls and place in a greased 9×13-inch baking dish.
3. Cover and let rise for another 30–45 minutes.
4. Bake
1. Preheat oven to 350°F (175°C).
2. Bake the rolls for 25–30 minutes, or until golden brown and cooked through.
5. Make the Glaze
1. Beat cream cheese and butter until smooth.
2. Add powdered sugar, milk, and vanilla extract. Mix until creamy and pourable.
6. Glaze & Serve
Drizzle glaze over warm cinnamon rolls. Serve fresh and enjoy!
